This past month, I went home to New York for a little R&R. One of my favorite things to do when I’m back up North is to go to the Catskills and go to the Redbarn Farmers Market (also known as the Pakatakan Market). Situated up on a hill, in and around a circular red barn in Margaretville (off of Route 30), visiting this market has become a summer tradition. It doesn’t hurt that Buddapesto is there, selling addicting tubs of bright green pesto, that bright yellow squash blossoms and heirloom beans are abundant, and that it’s possible to get sharp cheese freckled with hops. But the real star of the show, the reason I dream about this market, is due to The Waffle People. Walk up to their table, and order a waffle with fresh whipped cream (I eventually ordered two). A huge mound of dough, studded with sugar crystals, is placed in the waffle maker. A few minutes later, out comes a completely caramelized, crispy, hot and all around satisfying waffle. Served with their fresh lemonade, complete with strawberry puree, it’s absolute bliss.

And… the views driving there, and all around, don’t hurt either!

I recently had Wafels & Dinges and people were raving about them. My response was, “Eh, they don’t hold a candle to the waffles at the Pakatakan Farmer’s Market!”
